Howdy!!! It's hot and humid down here in South Texas and I'm rather partial to a nice, cool salad with a pitcher of sweet (Nutrasweet) iced tea (add a sprig of mint and one shot of Tequila) for lunch on the porch or patio. My salad of choice is a shrimp and Stone Crab claw recipe that includes chopped boiled eggs, onions, fresh minced garlic, cilantro, Mexican oregeno, jalapenos (minced & grilled), celery, mayonaise, mustard, olive oil, rice vinegar, fresh squeezed lime or lemon, and then allow to marinate for no greater than 15 minutes. Voila, enjoy with tortillas or crackers....need I say more!!! I'm rather curious to sample other salad recipes which you gals & guys prepare.

Sounds good!

I don't think I've ever made the same salad twice, lol . . . especially not the dressing. In the summer, I tend to use fruit as my flavor accents, usually with a savory type dressing. Fresh cilantro is one of the mainstay herbs I use.

Oh man, it has been hot here in Northern Indiana too.........we have been eating off the grill, or something chilled like salads for 2 weeks. When it gets this hot I have no appetite, and I wait for the sun to be GONE before I want to eat.

Last night I made pasta salad, it had shells, chicken, peas, carrots, bacon pieces, parsley, a little miracle whip w/a dash of vinegar, a dash of salt/pepper. Nothing fancy, but with kids in the house I must keep it simple or I get the wrinkle nose face when they look at the plate.........LOL

Hmmmm.... you're making me hungry! We had Salmon yesterday... I put a liiiittle bit of butter in the pan and 2 teaspoons brown sugar (Splenda makes brown sugar stuff now, too!) mixed it and slapped the salmon in there. I let it sit there for a couple minutes and then poured 1/3 cup of Jack around it and turned it. The salmon got a nice sweet glaze :)
Then I mixed a bit of honey and balsamic vinegar in a bowl, mixed in 2 pealed pears and a handful of walnuts and threw that in the pan to sautee it. The walnuts got caramelized in the honey and the pears picked up more of the balsamic vinegar taste.
Everything comes on top of some baby spinach salad, mixed with some bell pepper strips, tomatoes, and cucumber. Yummy!

I like a Cobb Salad ...with different meats or seafood .

I make a variety of salads at my work. A very simply and easy one to make is our Marshmallow Salad. Its simply mini flavoured marshmallows, a mixture of fruit (pineapple, mandarin oranges, cherries, pear and apples) over-whipped whip cream and jello powder of any flavour (my favourite is peach though). Mix it all together and voila! We also make potatoe salad, macaroni and ham salad, bean salad, marinated carrots, tuna pasta, caeser salad, pesto pasta salad, brocolli salad, waldorf salad, and whatever else we feel like LOL

Sounds delicious Gig!!! I love cobb salads (not the most figure friendly though) made with bibb lettuce!!! I also like to quarter a chunk of iceburg lettuce and make a shrimp dressing and serve it with cherry tomatoes. Very refreshing!
