recipe question..oven fried chicken...

I came across a recipe a while back for oven fried chicken where you use instant potato flakes to coat prior to putting in the oven. I can't remember if the chicken was rolled in egg first, or what. I have tried searching, but my pokey dial-up is giving me misery. I do know it's instant flakes and not 'buds', and I have garlic herb in the pantry. I know..sounds so gorey with tons of calories, right? well...that's what I'm craving today! LOL :) has anyone ever heard of this? if you can help me get my craving in check...THANKS. guess I could always just try coating in egg, but I'd sure hate to mess it up. it may be coated in mayo first (I KNOW..MORE ICK..LOL!)

I would think you'd coat it in egg first, but I've never done it with instant mashed. But for crushed breakfast cereals, you use eggs :)

THANKS, bogart! I am making recipe #4. the instant potatoes I have are garlic/herb, so I just did the roll in butter that recipe suggested, and I added romano/parm grated cheese. yes..more butter on top..lol it smells divine. my hubby would make such faces if I made instant mashed potatoes, so I have no idea why I have them in the pantry. BUT..if this tastes as good as I think..then instant taters will be a staple for this chicken!

I make oven fried fish all the time and have also made oven friend chicken a lot too. I personally just rinse the meat and then I coat mine in a mix of cornmeal and italian seasoned breadcrumbs. I never coat in egg just because I never have any but the meat is plenty wet from rinsing it. :) I have also coated it in crushed up corn flakes. Then I put it on a pan and spray the top well with Pam. Bake at 350-400 for 30 minutes for chicken and about 15-20 for fish.

I love Italian seasoned bread crumbs! But the potato flakes might definitely be yummy. I usually coat my chicken or pork chops in flour first, then egg on top of that, then bread crumbs and lately, I've been frying in olive oil. It's just so yummy. I take the pork chops and bash them thin and flat. Then do the coating. I don't think coating in eggs would ever ruin your recipe.

we loved it. it's easy and was so tasty. seems those instant taters are cheap, too, which is why we had them. hubs...that man just can't pass up a good bargain. lol (that's great, except when he buys something he won't really eat. like when he used to buy those frozen pot pies when on sale, then never want to eat them) :)

mmmm..Dober, that's how I usually make my fried things, too. those Italian bread crumbs are so good, and for just two people we sure go thru a lot of olive oil. :)
