creamy pasta salad

Hiya folks, hope the day finds you all well :)

I was just wondering if anyone had a good recipe for nice, creamy pasta salad. I have made my own before, but can't seem to get the creaminess effective. Once it's refridgerated, I find I have to add Mayonnaise and sour cream to it, repeatedly to make it cream up. Otherwise it takes on a drier consistancy which isn't as nice.

What am I doing wrong? Any recipes or tips?

not really...cause I hate when that happens! BUT, it does help if you rinse the pasta immediately in cold water until completely cooled. then drizzle a little olive oil...let that soak in a bit. it's the pasta that absorbs the moisture. I LOVE pasta salads....soooo many yummy ways to make them. I do what you do....just add a bit of moisture when serving if needed. altho I usually make my pasta salads tossed with Italian dressing, which seems to stay 'wet'. the one mayo based one I make.......shells, crab, salad shrimp, celery, onion, juice from half a lemon, and a dash of old bay seasoning.....I sometimes have to add a bit of mayo the next day. ok...now I'm starved!!!

After posting this I was told that alot of recipes call for Balsamic vinegar, or normal vinegar. This maybe where they are getting the creaminess from.

I know it's making me hungry and I've worked up an appetite, after just walking the dogs, but I gotta go to work soon LOL.

Would pasta salad make a good brekkie? :yikes: :lol-sign:

Also, try some juice from pickles. That does it for me and gives it a good taste.

Cant someone post a full recipe for me? The easier the better as I am not 100% kitchen savy :D

Mine is as follows.

Boil the pasta until cooked
Chop all veggies you want cooked. Lightly steam in the mircowave, allow them to cool.
Chop all salad bits you want added, ie, carrots, cucumber, olives etc.

Place pasta in bowl. Add plain yoghurt, olive oil, and mayo. Mix well, add veggies and salad ingredients.

Add lettuce into individual portions just before serving or it will go limp. Sprinkle feta cheese on top and drizzel with olive oil and balsamic vinegar. Add salt and pepper to taste.

1/2 cup of horse semen works best, also make sure you pound the sauce hard with a good stout kielbasa before cooking
