around here, fall means cooking! ok..if you hate roasted cabbage..stop reading. otherwise, this is a layered dish that is AMAZINGLY DELISH.
big roaster (or a huge glass baking dish, which is what I use)
layer...(each layer is tossed with olive oil, garlic powder, rosemary, dill, salt, pepper) you can toss with the ingredients, or make a pesto if using fresh herbs)
butter pan generously. bottom layer is sliced potatoes (don't have to peel)
second layer...grated cabbage (remember..toss each one with above)
third layer...slice a lean pork tenderloin, or boneless pork roast with all fat removed...to about a half inch slices..again..tossed in the seasonings. place over the cabbage layer.
fourth...another layer of the grated, seasoned cabbage. cover with foil.
(I use an entire head of cabbage and a good sized roast)
oven for approx. 2..2 1/2 hours at 350.
remove..top with tons of shredded Fontina cheese. (Monteray Jack also works well if the budget calls for something a little less pricey)
put back in until cheese is bubbly (and I put on TONS..lol)
and that is what is for dinner tonight! (you can use sliced lean beef, but the pork is better IMO)
