How are you with tuna, salmon, halibut or swordfish?
I love tuna, and I like salmon in the can........hahahaa, but fresh salmon not so much.

*ducks the tomatoes being thrown*

How about the salmon and tuna steaks in the pouches that are already cooked?

They make a beautiful, low cal meal on a bed of mixed greens with a few extras like sugar snaps, asparagus spears, maybe a few almonds or soy nuts for crunch, and whatever vegetables you like. The one in the citrus is good with a salad with mandarin oranges added. A drizzle of low cal balsamic vinaigrette and you've got a meal that you'd pay a small fortune for in a restaurant.

A salad like that with strips of good beef is another way to eat low cal but high taste. Mix a little dijon mustard into your low cal vinaigrette.

It really helps if your food pleases your eye and your sense of smell as well as tasting good.

I have never tried the tuna or salmon STEAKS in a pouch.......I do buy the albacore tuna in pouches though :D

I think 400 caloreis is totally doable. I have tons of recipes that would meet or at least come close to this that even hubby approves of. I am on Weight Watchers and I usually try to stick to a 5-7 point dinner which falls close to that except that the more fiber I add the more calories you can have and still not gain points. Anyway, here is what we had tonight. I read the calories on everything and calculated it the best I could.

I also just bought a cookbook by Holly Clegg that I really like. She has a line of "Trim & Terrific" cookbooks. It is one of the first cookbooks that I have gotten that has had more than 1 or 2 recipes that are appealing to me. I am about to order another one. I have made quite a few recipes now and they have all been really good.

LF Chicken Fried Rice

Servings 6
Serving Size 1 cup
Points Value 3 (I calculate approx 160 calories per serving)

Ingredients

2 sprays cooking spray
4 large egg whites or 1 eggbeaters
½ cup scallions, chopped, green and white parts
2 medium garlic cloves, minced
12 oz uncooked boneless, skinless chicken breast, cut into ½ inch cubes
1- 16oz bag frozen mixed vegetables (carrots, peas, green beans, corn)
2 cups cooked brown rice, regular or instant, kept hot (I use 1 cup of uncooked to yield 2 cups of cooked)
3 Tbsp low-sodium soy sauce (I am much more generous than this with the soy sauce)

Instructions

Coat a large nonstick skillet with cooking spray and set pan over medium-high heat. Add egg whites ( or eggbeaters or medium heat) and cook, until scrambled, stirring frequently, about 3to 5 minutes.
Remove from pan and set aside.

Offheat, recoat skillet with cooking spray and place back over medium-high heat. Add scallions and garlic; sauté 2 minutes. Add chicken and mixed vegetables; sauté until chicken is golden brown and cooked through, stirring frequently, about 5 minutes. I often cover it to help it steam more and not get so dry.

Stir in reserved cooked egg, cooked brown rice, and soy sauce; cook until heated through. About 1 minute.

This is a Weight Watchers recipe that I adjusted to make easier and fit our taste buds.

A 6 oz. salmon steak glazed in soy sauce, honey, and grated fresh ginger. Yum! And of course, very healthy. I believe that 6 oz. of salmon would fall somewhere in the 250 calorie range...gives you a little left over! This is definitely a tried and true recipe in terms of taste!

Coop . . . and anyone else . . .

Whipped together some pizza sauce (can of diced tomatoes and a small can of tomato paste, a little balsamic vinegar, pinch of sugar, garlic, basil, oregano, parsely, crushed red pepper, a few chopped black olives (they give that olive oil flavor without the calories).

Let it simmer.

Put a couple of spoonfuls on a pita @ 160 calories
Used a quarter cup of shredded Kraft Five Cheese Italian @ 90 calories
Baked it like I would a pizza.

Took care of the extreme pizza jones I've had for a long time now. You could add Canadian bacon as a low cal pepperoni sub, any kinds of vegies.

Soup for one . . . .

I took about a cup of low fat chicken broth

Added half a well-baked sweet potato

Tablespoon of heavy cream (you could use the fat free half and half that's available, but you NEED some fats for your skin, among other things, and it's 50 calories)

pinch of cinnamon

dash of mace

Whirl it in a blender, put it in a bowl and nuke it 'til it's hot.
