They're made out of tungsten carbide which is an EXTREMELY strong, tough metal. Only themselves (or other tungsten carbide items) and diamonds can scratch it.

Now, these are extreme close-ups I took of the rings, so the celtic knotting is not THAT huge and noticeable.
