Got us a goose! need some good goose recipes

I know a few of you know how to cook a good goose. Got any really good recipes?

I did once once only ............ roasted like turkey with an apple stuffing . Very Oily .

I would suggest. Getting a good peice of maple about a foot and a half long by a foot wide. Place the bird on the plank and cook it in the oven at 300 for 4 minutes per pound. When its done take it out throw the goose to the dogs and eat the board. Then go git ya some elk steaks!

just so you know to read posts AFTER coffee....I thought you said you got a MOOSE, and wanted moose recipes. LOL I'd have no clue, but I imagine I'd cook it like a turkey. :)

Same with duck unless it's wild and has been " seasoned " a while . Infact , all wild game should be " seasoned "...... you hunters know what I mean !! Not salt and pepper !

It takes getting used to for sure. I tend to jerky all big game except for the back straps and tenderloins that I cut into steaks. I see no reason to eat a gamey roast when I can have tons of delicious jerky. I think its good for the teeth as well, as long as it isnt that ground jerky stuff.

My Dad used to string all the wild fowl by their necks in the basement to age, cure or season etc.

My husband fixes a delicious smoked goose breast. It is marinaded for a few days in the fridge and then puts it on the smoker wrapped in bacon.
But I do not know the recipe he uses....and he is away hunting/camping for the first week of buck season... and this is the first year my 7 year old went with him. Yeah. They will be back for thanksgiving though. I will ask him....to little too late?

He also made some goose jerky to take with him on his deer hunting trip. Even the kids like goose, duck, and doves.
