is there a book or class available where i can teach my puppy to defend herself in case another dog attacks her?

not run away or fight back- but barely budged an inch or two, turned her body 90 degrees, ducked her head, and made a little puddle on the sidewalk. almost like she was crying.

You don't need a book that teaches your dog how to defend herself. If there is such a book?! And if so I'd stay clear from it.

What you need is a book that explains dog body languages so you can better understand why your girl did what she did. This is dog’s ways of communicating. All she told this other dog was "I'm not threat to you and I mean you no harm” which is a good thing.

A small book I find great that gives you a quick explanation on dog body language is a book by,
ON TALKING TERMS WITH DOGS: CALMING SIGNALS 2ND. ED.
