What does it mean wen it says it is processing the video

like after you've uploaded it

It means its going through the uploading process. Even though you have uploaded the video it still needs to process it. If its a detailed video it can take a long time.

means it's syncing it to their database so people can view it.

It's doing all that, yes, but what takes most of the time is converting your video from .mpeg or .avi or whatever to a Flash file. The file YouTube actually plays is in a completely different format than the one you upload, and it takes time to convert.
