Because they have been heat treated and are not safe like raw bones. ANy sort of heat application (roasting, boiling, baking, smoking, barbecuing etc.) changes the matrix of the bone and increases the risk of it splintering and possibly impacting in the digestive tract.
If you have a petstore that sells raw, frozen bones, those would be okay though.
