Official "Dinner" Thread

I cooked a big pot of black beans and another of chick peas the other day, plain, so I'd have them to work with.

So . . . . today I made hummus with pine nuts and cilantro, and I used part of the black beans to mash and mix up to make spicy black bean burgers with curry and cumin. I just finished one on a whole wheat bun with romaine, tomato, sweet onion, some green Goddess dressing, and grilled green tomatoes on the side.
 
That sounds good. I like green tomatoes, fried or grilled. We are having meatloaf, green beans, and horseradish mashed potatoes here. Very American.
 
Oh man Renee, that does sound delicious!

I LOVE that Green Goddess dressing! It's not a ranch, and it's not a "miracle whip" type tang.......it's somewhere between and I really enjoy it. I bet that set it off to perfection!
 
Grandson ( Ian )here so I'm doing a chicken stir fry with veggies and wild/white rice ! Hope to get something in him beside junk food !!!
 
I have never tried couscous! I ADORE pastas so I would probably like it.........don't know why I have never tried it, LOL

Sounds good Grammy! I like chicken stir fry, but I LOVE crab meat in place of the chicken *yums*

We had baked ham (baked it today in my electric roaster), alfredo noodles (from a package), and corn (from a CAN :eek:)
 
I love couscous too! It really is easy! I love adding some raisins to it while it 'cooks'! Yum! :D
 
We are pooped out from doing the flea market today. I am thinking I will make a pasta salad, something light and easy. I DO NOT want to go to the store! LOL

What I have:

I have a fresh garden cucumber from my friend.
I have some Roma tomatoes.
I have some onions, green and yellow.
I *might* have some bell pepper.
I have some shell pasta.
Various spices in the cupboard.
I know I have several choices on dressings........ranch, green goddess, italian, miracle whip, and perhaps some real mayo.

Suggestions?

Go with what you've got, pick a dressing, and cut it with the mayo :)
 
I don't have any bacon or ham (or any FAST meat to throw in) and I didn't know if there were any other things you would suggest that I hadn't thought of that I *might* have in the cupboard or fridge, LOL

I did find a bag of frozen peas in the back so I will toss that in too! :D
 
Got any cheese of any sort? Eggs? Chicken you could cook and throw in there for some protein? Tuna?

Oh, if you want to add more nutrients and less calories, instead of cutting the dressing with mayo, use lowfat cottage cheese. If you want it smooth, just run it through the blender.
 
I have eggs I will throw in.........I don't want to turn it into a tuna dish (I was eye balling the tuna), Kevin isn't wild about tuna and pasta together :D

I think the eggs should add the last touch! Sounds yummy!
 
I am doing stuffed courgettes tonight.. Round Courgettes stuffed with wild mushroom, Bacon and full fat cream risotto, topped with Comté cheese and nuked in the oven! Hmmmm.. Have to be inventive when your Courgette plants have been giving you at least 10 courgettes a week since the month of June.. And the mushrooms I collected myself, the cream is from the local farmer so all in all this dish cost me next to nothing! Wahooo!
 
that sounds interesting.

We had sirloin roast with gravy, garlic mashed potatos, fresh baked bread, and brown sugar glazed carrots. mmmmmmm
