Labor Day barbecue!

I took a vacation day at work, so my Labor Day weekend starts today! *happy dance*

We decided last night to have a barbecue on Sunday. Fine and dandy. It won't be quite as large as our epic Labor Day barbecues in the past since it's kinda spur-of-the-moment, but that's fine by me. I can't wait, it should be a lot of fun.

So yeah, we're firing up the smoker early on Sunday morning and having:
- chicken
- pulled pork
- sausage
- brisket
- jalapeno poppers (jalapenos stuffed with cream cheese and wrapped with bacon)
- potato salad
- grilled corn on the cob
- homemade mac & cheese
- homemade honey wheat rolls
- rice pilaf
- borracho beans (beans cooked with beer, peppers, tomatoes, onions and ham or bacon)
- fruit salad
- cake (haven't decided what kind yet)
- fudge

SO glad we got the kitchen remodel done! Trying to do all this is my formerly tiny kitchen would be a nightmare. On a sidenote: I find it hilarious that I keep our freezer, fridges and pantry so fully-stocked that I can throw a spontaneous barbecue for 30 people and barely buy any groceries. All I had to get were the potatoes, jalapenos and corn. :rofl1:

So, anybody else having a Labor Day get-together?

Oh somehow I knew you'd be making me hungry with your holiday bbq plans Gemp! LOL, At least I'm not tortured with photos...........YET! hahaha

We are not throwing a Labor Day cook out. Sunday is my oldest son's birthday, so we'll be having a birthday dinner. Monday we might grill some burgers or hot dogs, not going to a big trouble though. Another son just turned 16 two weeks ago, we had a huge cook out at the park. So between birthdays and camping, I'm kind of 'cooked out' LOL

Yeah, I can understand being "cooked out". I think the only reason we're up for this one is that we haven't had a big barbecue since spring. And by the way, I had to point out that we're cooking pork. I know you say that it's not barbecue unless there's pork on the pit. :D

Wow, wish I had your plans or could make it to your house! Looks like we're getting rained out this holiday so we'll be inside.

OK, can you part with your homemade mac n cheese recipe?

I'll probably put some sort of meat in the smoker, but not nearly as extensive as Gem. I may just scrap it and come over there :)

The youngest offspring likes to help with the ribs (she trims them, makes the rub and rubs them down), so I will probably get a rack or two of those. Maybe do some wings as well. Gotta make my salsa and some guac as well.

Oooh, ribs. I have such a weakness for good beef or pork ribs, fresh from the smoker. *drool* The only reason I'm not doing any for our barbecue is because I don't have enough to go around.

I'm curious, do you have a specific wing recipe you really like? I found a bunch of chicken wings in the freezer. I'm debating about throwing them on the smoker and serving them up as an appetizer or something. I was going to do the usual buffalo style, but I'm up for trying anything that sounds good.

Really, wings in the smoker are fairly simple. You can dust them with your favorite rub and smoke them about 2 hours (or until done). I often do that. Once I used too much cyanne, though, and definitely heard about the "suicide wings". The last time, I minced some garlic and put it in a pan with olive oil, sauteed for a few minutes to get the oil good and infused and then painted the wings with the garlic/oil mixture and smoked them. A little kosher salt (very little - it goes a long way) as well. Nothing fancy, really. Have some sauce on hand (bbq, buffalo, etc.) for those who may want to dip.

Edit: You may want to do an hour in the smoker, then foil them and let them go until done. The skin can get leathery if you let them roll too long in the smoke.

Actually, my birthday is on the 4th. I don't know if anything much is happening this week end or not....at least not that I know of. I'm going to my Mom's next week end though when my daughter returns from Chicago. My Mom is doing something for my b-day, like taking us out to dinner or something.

Hoping to head down to Columbus sat or sun for the rods sidewalk sale if we get all our hay moved tonight.

No... though on Labour Day Allie, Finn, Rosey and I may be going hiking... I actuslly have a sorta long weekrnd fotr once.. just have to work Saturday for a wedding

I want to come. We're doing a going away thing for my step-sister (study abroad) tonight. Then tomorrow we're celebrating my step-mom's birthday. I think we're grilling steaks on actual labor day though. I would kill for good Texas BBQ though!

All September babies are awesome. LOL. My birthday is on Tues. the 4th. But I was born right on Labor day in that year.

Being in the land of sausage, cheese, and beer it was decided that we are having a cookout featuring about 6 different kinds of sausages from a local source.

I am not sure what else will be on the menu as people are bringing stuff :)

Wow, lots of birthdays going on! Sounds fun. I'm so glad that the weather here finally decided to break. Tomorrow's going to be only 95. That's considered pretty balmy summertime weather in this part of the world. I do think I'm going to have to make a big batch of ice-cold sangria, though.

My grandfather is having a end of the summer get together. As usual I'm the meat master and this year I'm smoking a brisket.
My husband now wants that embroidered on a barbecue apron for himself. :doh:

I would kill for good Texas BBQ though!
Do they not have barbecue in Oklahoma?
