Just as the title says....I'm so swamped with zucchinis right now, and mostly just doing tons and tons of stirfries. I did some double chocolate zucchini bread the other day, that was amazing and decadent. Tried some zuch fritters/pancakes, too.

Any other ideas?!?

A former coworker sliced zucchini into little disks, and topped it with pizza toppings before broiling/baking it. It was remarkably tasty.

For EATING Zucchini (we have a ton as well) we do pretty much everything mentioned here. Zucchini noodles are AMAZING and we make regular zucchini bread (I've never tried chocolate!) We also make these- this might be similar to whatever fritters you made, but man that old bays seasoning makes them taste really crab cake-y

I may have eaten half of a loaf of zucchini bread by noon today but since you've got bread covered:

I also do the pizza thing, and do little slices and put turkey and cheese in between and grill them in the George foreman grill (I imagine you could just bake them).

I make zucchini fries a lot (baked, though. Dip in eggs/breadcrumbs and parm)

I do zucchini boats sometimes but I don't like them as much as the other things.

I like zucchini and carrots julienned and sautéed in butter as a side dish.

I've never made it, but a friend makes a zucchini pie (like pumpkin pie but with zucchini and it's fantastic

OMG ahahaha well I guess I missed the innuendo when I posted this, oops! :rofl1:

But thanks for the various recipes! And as for giving them away, pretty much everyone has too many this time of year so it's hard to find homes for them...the chickens eat whatever ones get too big.
