Since I'm making it tonight, I thought I'd share the recipe with my fellow Chazzers. It is a variant on meatloaf that will make you forget those horrid, gelatinous, flavorless things that were forced down your throat as a chld. I'm not the originator of this concoction, but I've made enough alterations that I feel I can call it:

Lilavati's Cajun Meatloaf

Spice Mix
2 Bay Leaves
2 teaspoons black pepper
1 teaspoon Cayenne pepper
1 teaspoon salt
1/2 teaspoon cumin
1/2 teaspoon nutmeg

For the Loaf

1/2 stick butter
1 large onion, chopped
1 celery stalk, chopped
3 green onions, chopped
8-10 large garlic cloves, chopped
1 tablespoon Worsestereshire sauce
1 tablespoon Cholula hot sauce
1/2 cup cultured buttermilk
1/2 heinz cup Ketchup
1.5 lbs lean ground beef
1.5 lbs ground pork
2 large eggs
1.5 cups Kelogg's Corn Flake crumbs

1) Combine spice mix and a bowl and set aside
2) Melt butter in pan. Add onion, celery, green onions, garlic, Woscestershire sauce, hot sauce and the spice mix. Stir occasionally until it starts to stick, about 6-7 minutes. Scrape the bottom well as you stir. Add ketchup and buttermilk. Cook about 2 more minutes, then turn off heat and allow to cool to room temperature.
3) Preheat oven to 350. In a large bowl, mix the ground beef and the ground pork by hand. Add the eggs, the vegitable mix from the sauce pan and the crumbs, mix throughly. Place the mixture into a 13 x 9 baking pan, and shape into a loaf approximately 12 inches long, 6 wide and 1.5 high. Bake for 25 minutes, then raise heat to 400 and cook for 30 more minutes, until top is blackened and sauce bubbling.
