Default Baking madness.

I've been up since 4:30 a.m., and I have a gigantic apple crisp baking in the oven right now. Yumm. As soon as that's done, I have a crazy Christmas cookie baking spree planned. I think I'll do sugar cookies, Russian teacakes, gingersnaps, thumbprint cookies, jan hagels, and whatever else I feel like doing. Mmmm.

So, anybody have a favorite Christmas cookie to suggest while I'm in my baking frenzy? I'm up for anything new.

I really like mexican wedding cookies. They melt in your mouth:

Ingredients

* 1 cup unsalted butter, at room temperature
* 1/2 cup confectioners’ sugar, plus more for coating baked cookies
* 1 teaspoon vanilla extract
* 1 3/4 cups all-purpose flour, plus more for dusting hands
* 1 cup pecans, chopped into very small pieces

Directions

Preheat the oven to 275 degrees F. Line cookies sheets with parchment paper.

Using an electric mixer, cream the butter and sugar at low speed until it is smooth. Beat in the vanilla. At low speed gradually add the flour. Mix in the pecans with a spatula. With floured hands, take out about 1 tablespoon of dough and shape into a crescent. Continue to dust hands with flour as you make more cookies. Place onto prepared cookie sheets. Bake for 40 minutes. When cool enough to handle but still warm, roll in additional confectioners' sugar. Cool on wire racks.

I've done something like that before, Barb, only adding cocoa.

Barb, Mexican wedding cookies and Russian teacakes are the same thing. I never did understand how that works, LOL.

Jan Hagel, Russian teacakes/Mexican wedding cookies and sugar cookies are done. I'm thinking good 'ol chocolate chip, just for variety. Or maybe something with coconut.

Sorry! I have an insane amount of energy today! I just found a recipe for some chocolate chip cookies, so I'm going to go whip them up and see how they go.

You can never make too many Christmas cookies, after all. :-D

Yup, there was a Chaz hiccup. Sorry. Well, the chocolate chip cookies are in the oven! Hmm....maybe I'm baking so much because it's cold. The longer I bake, the warmer the house gets.
