Last night I made lemon pepper chicken, corn on the cob and broccoli, carrots, and snap peas.

Not sure about tonight yet

I haven't gone grocery shopping in a while, so tonight I got what I had and made Mushroom Turkey Italian Surprise. The Italian surprise occurred after dinner though

I had eggplant parm tonight. No breading or fried. Just olive oil and spices and baked. Didn't eat the pasta. Trying to be really good

Since I have not been feeling well, I have been really wanting some of my Granny's home made veggie soup. So that is what I made for dinner last night.

Mine will never be as good as Granny's, but it was comforting anyway, LOL

Tonight I made this: Shrimp Scampi with Linguini Recipe : Tyler Florence : Food Network

And it was like... really, really, really, really, really, really, really, really good. I mean really good.
