I have three rolls of biscotti in the oven doing the first baking . . . for the dogs, lol.
Did some research on basic biscotti and what makes it crunchiest (using only the egg for binder, with no oil) and there is now a batch of oat bran flour, wheat flour and polenta molasses gingerbread biscotti baking. If the reaction to the raw dough is any indication, it should be a hit. Smells WONDERFUL . . . .

They are a major hit with the dogs . . . pretty tasty as far as I'm concerned too, lol.

Oooooo... yummy!
I really ought to make Morgan some treats... someday... I keep getting these cookbooks for dog treats and cat treats, and I have yet to make a single recipe. Lol!

Tallulah's Southern Molasses Biscotti
Preheat oven to 350 degrees F Grease/spray a cookie sheet Roughly, I used 2/3 cup dark molasses 3/4 tsp sea salt 4 beaten eggs 1/8 cup organic turbinado sugar (they are TREATS, lol, and that took the edge off the molasses) Combine those ingredients in a bowl In a separate bowl: 1 1/2 cups oat bran flour 1 3/4 cups wheat flour 1 cup polenta 2 tsp ground ginger 1 tsp cinnamon 3 rounded tsp. baking powder Stir together thoroughly. Make a well in the center and add the liquid ingredients, mixing until just moistened. If you need some extra moisture, you can add some milk. I used condensed, as it's a little richer. Divide the dough into three parts. Spread some polenta on a flat surface and roll out each part of the dough into a long tube about the length of your cookie sheet. Bake for about 35 minutes Remove from the oven. LEAVE THE OVEN ON. When the biscotti is cool enough to handle, slice it (a bread knife seems to work best) into approx 3/8 inch wide cookies. Lay them out separately on the cookie sheet and bake about 7 - 10 minutes, take 'em out, flip 'em over and bake the other side for about 5 - 7 minutes. Cool on racks. When completely cool, store in airtight containers.
