Greyhound vs Saluki

Aside from physical differences (appearance and running style), what are the differences between the breeds? So different, and yet extremely similar "dogs" since sometimes they seem think they're cats.

I've heard that the Saluki is even more cat like and aloof than the Greyhound, but can anyone expand upon it? Cold weather tolerance? Would a greyhound be an appropriate "practice hound" for someone considering a Saluki in the distant future? Availability is a major problem with Saluki, whereas rescue track greyhounds are common, and good pets in their own right. For someone who has fallen for the Saluki, is a greyhound comparable?
