We are doing our annual Christmas cookie bake this Saturday, and I don't know what to make!!
Anyone have any favorites they'd like to share? Spritz cookies and gingersnaps are already covered but I think just about anything else is fair game.

We made 15 kinds this year!
My new favorite, which we did for the first time, are the Shimmer cookies. You need an extract that I think they only sell at King Arthur, however. Oh my gosh, so good though! Citrusy and sweet. http://www.kingarthurflour.com/recip...cookies-recipe New Zealand Holly are another favorite. Super pretty and very tasty as well. I'm weird and do not like chocolate as a rule so cookies with white chocolate or an alternative excite me.

Not Christmas specific but I always end up making them around this time of the year. They're a little labor intensive but not hard and sooooo good. I always use mint chocolate instead of just mint chips.

I know right!! Most expensive endeavor ever.
![]() I keep coming back to those Rolo snickerdoodles though. Seems like the safest option, I think my family would actually find those appealing. The cake batter bars are awfully tempting too... ugh dear God how to decide!

Hot Cocoa Cookies
Ingredients: 1-1/4 cup butter, softened 1 cup sugar 2/3 cup packed brown sugar 2 eggs 1 tsp. vanilla extract 3-1/4 cups flour 4 packets instant hot cocoa mix 1-1/4 tsp. baking soda 1 tsp. baking powder 1 cup semi-sweet chocolate chips 1 cup mini marshmallows* Directions: Preheat oven to 350F. Beat butter and sugars in large bowl until light and fluffy. Add eggs and vanilla; mix well. Combine next 4 ingredients in separate bowl. Gradually beat into butter mixture until blended. Stir in chocolate chips and marshmallows. Place 2 tbsp. dough on cookie sheet. (Or smaller and reduce baking time. 2 tbsp. is kind of big.) Bake 9 to 11 minutes. (If you bake them a little less they're gooey and chewy and awesome.) *You need those little dehydrated marshmallows that come with hot chocolate. They're kind of hard to find, but you can buy the Swiss Miss Marshmallow Lovers and use those since the hot chocolate and marshmallows are packaged separately.
