I want to make peanut blossoms but have no veggie oil. I do have coconut oil though. Would it alter the taste of my cookies though?

As long as other ingredients (eggs/liquids) are at room temperature, it's fine. Use the same amount. I'm not sure why they have to be room temperature, I've just been told and never really tested it...

Cool because I REALLY dont want to have to wake Jeremy up to drive 15 miles to get me veggie oil LMAO. I think he might kill me.

It'll change the flavor a bit, but Pops is right - not in a bad way at all. When I make cookies I use coconut oil and they turn out wonderfully.

Coconut oil (at least the virgin stuff we sell at work) is solid (sort of like a jelly-consistency) at room temperature, liquid at about 75 degrees and up, and rock-solid-hard if it's cold. I would imagine for mixing purposes, you'd want it room temperature or higher - it may start to get hard if you mix it with cold eggs, or cold butter, or whatnot.

FYI you can also sub in applesauce or even pumpkin puree for butter. I think the measurement for oil is a bit different just because it's liquid vs. solid. I often make things with applesauce instead of butter, if it's a good alternative. Not as good for cookies per say but muffins and such.

Well I mixed it with it (did melt the oil in the microwave) but I didnt feel like baking them so I'm baking them now LOL.
