Although I got it on a "soup addict" site, it isn't really a soup. LOL! It really is a stuffed pumpkin.
But it was OH SO GOOD. I'll have to find a true soup recipe... and another pumpkin. I'll keep you all posted.

I do professional pumpkin carving for Halloween and always save one for the Thanksgiving table. There are some really nice and appropriate patterns for the holiday!

Look up Ben Starr's website, he was on the second season of masterchef and he loves pumpkins. So far have done the carrot pumpkin spice cake (which I'm afraid to make again as I ate slices of it cut frozen off the leftovers, the freezer didn't keep me from it); the gingerbread pumpkin pancakes (which the neighbor's kid came and ate and stalks us now for more) and the pumpkin bread which got mowed through at work......

I think carving pumpkin tends to taste pretty nasty so at most I'll roast it and feed the puree to the dogs.
