I'd look for someone who is actively pursuing performance titles with their dogs, can point to performance titled dogs they've produced, and is producing (relatively) moderate dogs - as in, dogs that aren't mostly big head, stuffy chest, and non-existant legs.

Particularly about the bit on finding breeders that work their dogs. I do find that extremely important when looking at working breeds. Major thanks to you both!As far wanting puppies, I actually do want a puppy. I just said young-ish because I'm not opposed to a slightly older dog.

I second the Chesapeake Bay Retriever. I've been thinking of them as a future breed as well. Seems to fit your bill. Protective, very active, not " I love everyone", a challenge, needs good socialization though. They are fricken gorgeous too.
