Most digital cameras have a B&W setting, you just have to look around a bit (:

For the D40, go to Menu > Shooting Menu > Optimize Image > Black-and-white

For the Canon Rebel series, the Monochrome setting can be set by going to your Picture Style menu and selecting Monochrome.

The Picture Style menu can be found by finding the button with an icon that looks like a little sun with one black notch. Alternately, it should be in one of your menus as "picture" or "picture style".

I hope so! I've been looking and can't find a b&w function on my little camera. I'm not blessed enough to have a fancy SLR.

I'm hoping I can edit mine to be black and white after taking it. My crappy little P&S has a black and white setting, but it makes the pictures suck. Badly.
