Help with traing commands

I rescued a 5-year-old German shorthaired Pointer from a rescue shelter. He is an incredible dog and has had a great deal of training.
Examples; he won't exit a door until after I have, he won't leave my side even though he obviously wants to, he won't urinate until I give permission
(Eventually he has to) plus various other things. My problem is, I don't know the commands to give him. All information I find tells me how to
train him but nothing tells me how he can train me. Can anyone tell me where I can find standard advanced hunting dog’s commands?
The poor dog won't even lie down until he falls from exhaustion

Thank you for any help or suggestions.

P.s. I have tried things like go, lie down etc. They don't work.

Just to clarify because I'm not sure...are you saying you got him and he knows many commands (and you know the behaviors he can do on command) you are just unsure of what the commands (words) were?

In this case, have you contacted the rescue to see if they know? Are you sure he was used as hunting dog?

If you're POSITIVE he's had training and won't do some of these things until you give him the commands:

I agree calling the rescue is a good start. They might be able to contact his previous owners. They may speak a different language, or something.

If not, just start giving your own commands you'd like to use when the dog does a behavior (ie, if you see him starting to lie down, say "down", etc.), even if he needs some encouragement, first. You can try hand signals, those are for the most part pretty universal, just google them I guess? And then give the hand signal then say the word.

As written above, try hand signals. A sweep of the arm, using your arm to point left and right, out then down for the down, etc. I would also teach him a break cue. That is, he may go and do what he likes.
