Default Ideas for tons of fresh veggies...

So the bf & I were at a party last night, and well...at the end they starting cleaning up & I asked what they were doing with all the food...the lady said they were throwing it away

Of course I had NONE of that...and they eagerly helped load me & my bf up. Here are the results:

So I have TONS of celery, bell peppers (red, yellow & orange), cucumbers, cherry tomatoes, broccoli, cubed cheese.

There are some shrooms & squash too, but I'll prob just stir fry those up & use em as a side.

I'm thinking some gazpacho for the tomatos & cukes. I'll def just bake some of the broccoli too...

But I would LOVE some ideas. The only thing is...i despise cooked peppers...I'll eat em fresh...they just take on an awful flavor once they are cooked IMO.

Anyways, I am looking for some easy, healthy ideas. Doesn't have to be anything fancy at all...I'm just gonna be snacking on these things. I'm also leaving in less than a week, so anything that could freeze would be great as well!

Some good dip!

Try the yellow squash raw. It's amazing.

I would stick a lot of that stuff in a saute pan with olive oil, garlic, pepper, and parm cheese and serve over pasta.

Well nearly ANY kind of veggie soup would work, and you could freeze that as well

Hmm, let's see- the mushrooms I'd saute up with some onion and garlic had have over a steak. The rest I'd eat raw with a dip (maybe stuff the celery with peanutbutter or cream cheese). Of course, sharing some with Caleb and the rabbit.

Take the veggies that are okay for dogs and make a mush and freeze it.

It's a shame as to how much food is thrown away !!! They should all go into a food bank for anyone !

oakley laughs in the face of veggies

I've tried sooo many times to get him to eat veggies...he is worse than a little 4 year old boy. If I smear it w/peanut butter, he just licks it off.... if I stick a piece in cheese, he just spits it out...he is just too much.

I've bought organic treats made with PB/cheese & veggies...if the veggie content is too high...he won't eat those either

Bubba, thats what I said to them!! What the heck!

Poodlemommy...that sounds delish...I think that may be dinner tomorrow night!

Thanks for all the ideas!

I know!!!!! the sick/sad part is that there was TONS more;.....we just ran out of container space....we only had like a shopping bag

What I don't understand is that there were like 5 people helping to clean up...why weren't they taking it!???

When my fam used to have work parties at our house, she would like DRILL it into the caterers heads that NOTHING is to be thrown out (this was after she learned her lesson at the first party when this expensive salmon dip stuff was thrown away!!!)

If I were a caterer...dang...I would never have to buy food!!!! Or I would at LEAST make sure it gets to someone who needs it. It just KILLS me to see food thrown away...
