Default leftover turkey - recipes!

Ok, so I have a LOT more leftover turkey than I bargained for hehe... so we're going to be having it a while I think! I don't mind, I love turkey.

So, what are your favorite recipes with turkey??

Here's mine... I stole the idea from a deli in my college town. It's a sandwich called Turkey Charley. On some good thick bread smear some cream cheese on 2 slices. Put a couple spoonfuls of cranberry sauce on one slice and pile that with ample slices of delicious turkey. Best sandwich ever! I also like a good open face turkey sandwich with bread, turkey, mashed taters, gravy, and maybe some stuffing all warmed up. Gooood.

First time ever, we used the leftovers to make a turkey pot pie, it is sooo delicious!

Usually, we do the sandwiches (turkey, stuffing, cranberry sauce) for days but this time we decided to try something different and I am glad we did!

I wish we had some leftover turkey. My grad student daughter took off with all of it!

I just love to reheat it all--and serve it up again! Although there isn't much left now--so it's on to turkey soup tomorrow.

Try and explain that to my boys who keep forlornly rummaging through the kitchen. I already had to bake a whole new potato casserole because Will, who is nine, cried when he saw the empty dish. It is horrendously unhealthy and i only make it twice a year.

Last night I made Turkey Stuffed Swiss Chard

You'll need:
1-2 bunches Swiss Chard
1/2 of a red pepper chopped
1/3 of an onion (white or red) chopped
4 shiitake mushrooms chopped
1/2 zucchini chopped
garlic (to taste . . . I like to use a lot)
2 tsp Worcestershire Sauce
1/2 tsp tabasco
1/8 tsp nutmeg
1/4 tsp pepper
1/2 tsp oregano
1/2 tsp thyme
1 egg
1/4 cup fresh grated Parmesan
and as much turkey as you **** well want! (either chopped or ground)

Topping:
1/4 cup dried bread crumbs of your choice
1/4 cup fresh grated Parmesan
1 tbsp parsley


Sauté the onion until clear, add the mushrooms at the end. Place in mixing bowl. Sauté the red pepper and close to the end add the zucchini and garlic. Place in the same mixing bowl when done. Then add the Worcestershire Sauce, tabasco, nutmeg, pepper, oregano, thyme, and egg. Blend well.

Meanwhile, steam the swiss chard. I used a steamer for 4 minutes and it came out perfect. Immediately after steaming rinse under cold water to stop the cooking process.

Lay the swiss chard on the counter and add in the stuffing mixture, being sure to roll from the stem end and tucking in the sides. In a greased dish (I used corning ware) place the rolled and stuffed swiss chard. Then sprinkle the topping mixture over.

Heat the oven to 350 and place in the Stuffed Swiss Chard in for 20 to 30 minutes. You may find you need to place foil over to prevent burning. Service with whatever you want



This is a super healthy recipe, and not for those who hate veggies, but I was REALLY REALLY happy with how it came out. I actually combined 3 different recipes so I hope I copied it all down right!!
