We started our dogs by encouraging the barking and biting then training them they must calm and not bite in order to get a bite, it's not easy!
I'll see if I have any progress videos for examples. There are a ton of methods for training the hold and bark such as using barriers, correction, and shaping. We use shaping for our dogs, basically we try and wait for them to offer the right behavior and reward with a bite.
