Salmon, covered with a sweet and sour rub, on the charcoal barbecue. Will have it with some white rice cooked in tomato juice. Yum.

Tuna "casserole" - its not really a casserole but tastes similar and only takes about 5 minutes to make (not including cooking the rice). Its a rainy, dreary day here and that sounds good. Kids wont eat it but we have enough random leftovers to feed them with

I made avocado & tomatoe salad with lime juice, cilantro and red onions, marinaded shrimp in lime, olive oil, cilantro and wraped it up in tortillas. We had rice & beans to go along.
It was SO SO SO good. mjam.

Tonight is meat loaf mom & I made together

One has Anaheim peppers, onions, bonded with cornflakes. The other is the same except its for my OH & it has hot peppers in place of Anaheim peppers. The meat is a mix of pork, beef & turkey.
