We just came home on Thursday night, and had an absolute BLAST.
Our initial plan was to spend 4 nights in San Juan Del Sur (beach town on the south Pacific) and then spend 3 nights in Granada (Spanish colonial city). We ended up not enjoying Granada and left before the first night to go back to San Juan Del Sur... so we spent the whole trip on the beach!
First, here's a map of Nicaragua. We flew into Managua, rented a car, and drove to San Juan Del Sur. Our weather couldn't have been better- the only day it rained was on our way to the airport!
Driving is a little... different in Nicaragua. If you've never driven in a Central American country or at least out of the US, I wouldn't recommend it! The roads were VERY nice, though (much, much better than in Costa Rica!), but the drivers are aggressive and they don't use street signs! With the help of GPS and writing out directions, we were able to get the hang of it!
San Juan Del Sur:

The view from our house at sunrise (about 5am)! The house we rented was AMAZING- we basically lived in the pool and watched the Pacific ocean right in front of us!

San Juan Del Sur has the second biggest statue of Jesus in the world (first is in Brazil). We climbed up a huge set of stairs to see the statue and had an epic view.

Every night we ate at a restaurant on the beach, since almost ALL of their restaurants are on a strip. Such cute restaurants with thatched roofs and beautiful views.
This man was out clamming in his very tiny underwear and was SO hairy. This one is called Beauty and the Beast. Haha.
