I made veggie curry last night
I usually just use what every veggies we have in the fridge! Last night it was onion, carrots, bell peppers and pak choi. Throw those in a skillet until soft (if you are going to add pak choi add that at the end... it gets mushy fast) then add coconut milk and curry. Eat over rice. It's so easy, but soo good
