Chicory is the root of the endive plant that is roasted and ground up and added to coffee grounds. They call it Creole coffee because during the civil war there was a coffee shortage and the Creole people around here used it to stretch there coffee supply.
Go 5 th grade Louisiana history class project. I can't beilieve I actually used that bit of useless knowledge I have. Lol
