Default Calming a dog on fast forward

I have a house full of Aussies, and they all can be pretty energetic, but they also have a "stop" mode, in which they understand we're not playing. They'll lay all around my desk if I'm on the computer, for instance. My niece, however, has an Aussie that seems forever stuck on fast forward. This dog can literally run for hours and still be hyper. I know, because I tried to tire her out. She's very sweet, but can't seem to sit or stand still. She ends up outside more than I'd like to see because her behavior is so antagonizing to the family. I've taken her to my place a few times, and though I do pretty well with dogs, it usually takes me 1-2 days to get her settled. Even then she seems like she's about to explode into a mushroom cloud of fur. When petting her, she stays more or less in the same place, but her legs all pump so fast she sort of spins around in place.

What can be done to calm down a dog of this excitement level?
