My favorite breed is Shibas- my favorite breeder is Leslie Engen of San Jo fame. My girl (in my avatar) is a San Jo girl, and the boy in my siggie is out of my girl by Leslie's "Taro," the top-producing Shiba of all time.
For Akitas it doesn't get better than Colleen Sullivan of Sondaisa. Yesterday I watched her beautiful girl Shimmer take a very well deserved Group 2 at Puyallup.
Both of these breeders are spectacular mentors and friends.

I love so many different breeds. I'm more of a rescue dog or mutt person myself.. I can bond and love just about any kind of dog, from your purebreds or mutts at the shelters, my agility dogs(toller, terrier, BC, etc), and my very own dogs that live in my house. So, I guess I'll just have to go with my ultimate heart breed, and that would be my cocker spaniels. :)
So far I haven't actually found breeders that I could say that I absolutely LOVE when it comes to cockers. Most either breed for pets, or breed for only conformation. And I don't like either. I appreciate versatility in a dog.
But, I have found one breeder, though I don't own the breed, that I have personally spoken to and I absolutely adore her. She is a breeder of wirehaired vizslas and can bee seen at www.wirehairedvizslas.com Not only is she a breeder that health checks, shows, and prefers a dog with hunting ability, but she is also knowledgeable on dog foods and training, two things that you don't see many breeders actually being heavily educated in. I always lose a little respect for a breeder when I hear them recommending crappy foods or horrible methods to train dogs. But this breeder has got it all. And not only that, but she has a friendly personality. What more could you want?

My favorite Golden breeder is Coppertop www.coppertop.net and my favorite Golden is "Ted," OTCH MACH4 Coppertop's Live Wire VCD3 UDX TDX MH WCX CCA VCX.
I don't really have a favorite Lab breeder. I would look for a particular litter that goes back to the same lines as Boo, because I am very happy with Boo's structure and drive.

I'll go with all time favorites in the breed (aside from my own dogs, of course :p). I consider these examples of the perfect Collie and they are what I strive to maintain in my dogs today.
CH Black Douglas of Alstead (1939)
CH Pebble Ledge Bambi (1944)
CH Shamrock Smooth Rocket UD (1957)
CH McMaur's Diamond Jim (1978)
CH Skyline Wooden Horse (1974)

My favorite papillon example that I've seen is:

BIS/BISS Ch Flashpoint Mission Possible
That picture from the Tulsa specialty is him beating my boy who took BOW that day. Though I hve to say, Cando deserved it. He's shown by his owners and shown very rarely as they're photographers. But when he's shown, he always wins. I love his head type. <3
I am very fond of Zippy's (Manchester Terrier) breeder
http://www.kismet.net/burmack/
He has been so responsive and kind and has met pretty much every criteria I have seen about being a responsible breeder. My other dogs have all been rescues, so I really haven't dealt with many breeders, but feel very lucky to wind up getting Zippy from Burmack (Zippy was almost 9 months old and needed a pet home after they decided not to show him).

Obviously the dobe... one dog that I just can't get enough of is Ch. Dictator v. Glenhugel. Nevermind he died in the 1950's... he's just a wonderful guy IMO.
For a photo and pegigree: http://members.execulink.com/~korevaar/Tater.htm
And yes, he's behind both of my dogs... you'd be hard pressed to find an American dog without him in its pedigree somewhere!
