I've noticed latley when I brush Bear that his coat is really dry and brittle. It's breaking in some areas. His fur is long and on his back it's breaking so it's getting shorter. He needs a bath and I was wondering what kind of shampoo you guys would recommend me to use?

Treating dry and brittle coat is something you really have to do from the inside (through nutrition) rather than from the outside.
Evaluate what you are feeding, especially the quality of the protein and fat in the food. Supplementing with a good quality fish body oil (not cod liver oil) is also a good idea.
Different shampoos work for different dogs, two brand I've had good results with personally are Earthbath (http://earthbath.com/shampoo_pints.html) and Buddy Wash (https://www9.mailordercentral.com/cloudstar/products.asp?dept=15).

He eats Purina One. That is the food that his prevoius owner was feeding him and he said that Bear was really picky about the type of food he ate and he liked that one. The type he gave him was pork and the type we bought was beef. He lost 6 lbs before he would eat it. So I tried to stick with the same type he was eating so I wouldn't have too much of a problem.

I wouldn't expect a dog to have a good coat on Purina.
I'm not sure I'm reading this right, but he wouldn't eat and lost 6 lbs? How many day did he not eat? You can try switching to canned (better for him anyways) or a canned/kibble combo. Good site on food:

Yeah he lost 6 lbs from not eating the food we got him. He lost 6 lbs in about a week. He wouldn't eat anything and when I took him to the vet for his shots and I noticed the weight loss I said something to the vet. He asked what I was feeding him and I told him and he said that alot of people feed that dog food to their dogs and that he would eventually eat it. Everyone I explained this to said "He'll eat it eventually." Which made me worry about him not eating anything. I worry that since he has now started to eat it that if I change his food again he might not eat and lose more weight.

I had to go by the vet last friday to pick something up and asked if they could weigh him for me. He hasn't gained back any weight he's lost yet but he hasn't lost anymore either. I expressed my concerns again and they did some blood work to make sure there was nothing else wrong with him but it all came back clean. The first time he was at the vet for his shots he went 4 days without eating anything. I started getting concerned about weight lose but all I heard from Everyone was "He'll eat it if he gets hungry." Which I hated hearing. If anyone has a suggestion for a good food to feed him or a supplement i could give him for his coat please send them my way. thanks for the sites I'm checking them out now!

Yes, diet has to do with everything but obviously you won't be able to change that immediately. It takes a while after you do the change, so meanwhile..
I use Bio-Groom (oatmeal formula) and both my dogs have no problems with it. I bought it in the first place because one of them seemed to itch a lot with other shampoos and I was told oatmeal would fix it. Their coats are sooo soft after each shampoo.
